Have you ever tried the Spanish cheese "Manchego"? Originally made from sheep's milk, it has a slightly piquant / acidic taste and a buttery, semi-firm texture. Before becoming vegan and when I still lived in Scotland, I regularly went to Tapas bars with my friends and ate copious plates of manchego! Juan and Cris from Mommus, have developed this vegan version, and what a success! Its typical slightly acidic flavour and buttery texture immediately took me back to Spain, and Tapas bars!
This BIG 220g cheese (!) can be enjoyed "tapas version", with for example olives, cherry tomatoes, marinated eggplants and vegan deli, or simply on a big, crusty slice of bread.
