A new cake mix perfect for those who love freshly baked cakes, but do not have time to spend in the kitchen! With zesty lemon and crunchy poppyseed, perfect with a lovely cup of tea and some friends (and the cat on your lap!).
It can be used to make sponges, loafs or cupcakes. It is gluten and soya free and contains coconut blossom sugar, a natural sugar with a very low glycemic index.
Preparation tips :
To Make the Perfect Vegan Cake:
140ml Vegetable Oil
115ml vegan milk (or water)
The more adventurous or experts can try experimenting and adding lemon zest, or aquafaba to the preparation....
Preheat the oven to 160°
Empty the contents of both the cake mix sachet and poppyseed sachet into a bowl
Add the oil & milk and whisk until combined. The manufacturer recommends using an electric mixer on low speed for 1 minute, scraping down the bowl then mixing on high for a further 4 minutes to ensure that your cake rises.
Spoon or pour the mixture into your prepared cases or tins and place in the oven.
The content can either make 12 cupcakes (15 min cooking time), 2 x 20cm sponge rounds (25 min cooking time), 2 loaves in a 450g loaf tin (30 min cooking time) or 1 loaf in a 900g loaf tin (50 min cooking time).
Cool on a wire rack, decorate to your heart's content and enjoy!
