The carob trees, beautiful jewels found in Mediterranean countries, produce long green pods resembling runner beans until they turn dark brown, like dried bananas when they are ripe. Carob flour, or Locust bean gum is a natural thickener perfect for soups and sauces, but particularly precious when making vegan ice creams and sorbets since it prevents crystals from forming. One more advantage, it is tasteless!
For cold preparations, simply mix the flour with the liquid and let it swell up. For hot preparations, mix the flour with cold liquid first, then bring to a boil, stirring constantly.
