A traditional white miso married to fragrant yuzu
A traditional white miso married to grated candied yuzu, white miso, sugar, mirin and sake. A perfect harmony between the sweet bitterness of the yuzu and the sweetness of white miso.
Fabulous in sauces or dressings, it can also be used as a condiment or to marinate vegetable meats or vegetables. Japanese-style, it is wonderful for eggplant dengaku, raw wheat gluten (nama-fu) or simmered Japanese radishes.
This miso was made by Kantoya, Master craftsmen for six generations in Kyoto.
Ingredients: rice miso (rice, soy, salt, alcohol, vitamin B2), sugar, mirin, sake, 3.43% yuzu bark, aspergillus oryzae
