A chili con jackfruit cooked with red beans is a slightly spicy sauce for a meal ready in a few minutes. Just enjoy with some rice and guacamole. Also delicious on baked potatoes!
The jackfruit is the largest tree-borne fruit on the planet (fruits of up to 35kg are not unusual in South America and South-east Asia) and it is considered a “miracle crop” as a single tree yields two to three tons of nutritious fruit each year, with minimal or zero maintenance. It is resistant to "pests" and drought and remarkably, to fight climate change, it could could easily replace wheat, corn and meat. This all-natural, non processed ingredient has a fibrous, slightly fruity flesh that can take on almost any flavour and is particularly famous to replace the "pulled" meat but, vegan style!
