One of the emblematic ingredients of the Cretan diet and used for thousands of years, carob syrup, extracted from the carob pod, has a sweet flavour and a velvety texture. It is perfect for baking, as a topping for ice creams or yoghurts, to thicken sauces and dressings and give them a delicious and subtlely sweet taste, or simply to sweeten hot or cold drinks. In Crete, it is also used for its medicinal virtues (but French law forbids us to talk about it...)
