Beautiful, slowly dried 5 grain udon

Beautiful, slowly dried udon with 5 grains: red rice, (Japan's historical indigenous rice), brown rice or genmai, millet, black rice and sticky barley also called purple barley.

To prepare: udon needs a lot of water (1 litre for 100 grams of udon). When the water comes to a boil, add the noodles. Boil the udon, keeping them floating in the pot and stirring them from time to time with chopsticks. If the pot is about to overflow, add water once or twice during the boiling process.
After boiling for 7 to 8 minutes, turn off the heat and let stand for about 5 to 8 minutes, covering the pan.
The noodles will be soft and delicious. Transfer the udon to a colander and pour in plenty of cold water.
For a dish using hot noodles, put them back into boiling water to bring them back to temperature and then put them in a bowl or soup plate and pour tsuyu or kombu or shiitake dashi broth over them. For a dish using cold noodles, soak them in ice water for 30 seconds to firm up the noodles.
