A new roast with an Irish potato and red pepper stuffing

A fantastic new roast which leaves baby lambs in peace! A tender tomato and lentil seitan with an Irish potato and red pepper stuffing. Wrapped in pastry, Wellington-style, or glazed, enjoy it with oven roasted potatoes, a gratin, a crunchy salad. Serves 4 to 5 people.


Ingredients: Irish Rooster Potatoes, Vital Wheat Gluten, Onions, Lentils, Water, Red Peppers (5%), Tomato Puree, Rapeseed Oil, Breadcrumbs  (Wheat Flour, Yeast, Salt, Cornstarch), Pearl Barley, Celery, Dijon Mustard (contains sulfites), Garlic, Cider Vinegar, Salt, Dried Rosemary, Black Pepper, Dried Thyme

Allergens: Wheat, celery, sulphites.

Directions:
Preheat the oven to 180°c or 350° f.
Remove the Festive Roast from the vacuum pack. Place the roast upside-down on a tray (a bread tin also works well) and baste all of the roast with half of the glaze (prepared in advance).
Cover loosely with cooking parchment (itself wrapped in foil if you wish, but not in direct contact with the roast ;) ) and place in the preheated oven. After 25 mins, flip the roast over and baste with the remaining glaze. Cook for another 25-30 mins with the paper remaining in place.

 
Easy Maple Glaze
1 tbsp olive oil
2 tbsp soya sauce
2 tbsp maple syrup

Lemon Thyme Glaze
1 tbsp olive oil
1 tbsp lemon juice
Zest of 1/2 lemon
8 sprigs of fresh thyme
Pinch salt and pepper

Garlic Dijon Glaze
3 cloves garlic, chopped finely
1 tbsp olive oil
1 tbsp dijon mustard
1 tbsp maple syrup

Glaze method : Whisk together with a fork until all the ingredients are combined. It's ready to put on your roast before cooking!
