Artisan family producers slowly air dry and mature these noodles toconcentrate their flavour. These are deliciously thick noodles which can be used all year round in a widerange of East Asian and Western dishes, including piping hot noodles inbroth, satisfyingly rich stir fries, and succulent summer salads. One of our favorite dishes in the shop is udon salad (fresh green salad in the center of the plate, udon on top of the salad, silken tofu squares around the plate with seasonal vegetables, with a miso vinaigrette - yum yum )
- Boil 1 liter of water, add the udons (100g for 1 person) and stir.
- Boil for 10 minutes then rinse in cold water to stop cooking.
