Serving Suggestion : Heat 2 tablespoons of sunflower oil in a pan over a high heat. Add a medium sliced onion and 2 crushed garlic clothes and fry for 2-3 minutes to soften Add 500g (1lb 2oz) of vegetables or vegan meat of your choice and fry until lightly browned. Stir in ½ jar of Geo organics Thai green curry paste and cook for a few seconds Add 300 ml (11fl oz) of coconut milk Add 3 chopped green chillies (optional) Add 1tbsp of soft brown sugar Bring to the boil and then simmer for 10 minutes stirring occasionally Stir in 1 large pepper, dressed and thickly sliced and 2 tbsp lime Cover and simmer for 10 minutes Add 2tbsp of fresh chopped coriander and season to taste Serve with boiled rice and garnish with fresh coriander leaves
