Eco-friendly, versatile, nutritious and gluten-free, sorghum is also the champion of photosynthesis, resistant to heat and with very low irrigation needs. It has become the new superstar cereal in the United States and is now grown in France.
Sorghum flour provides starch, protein and dietary fiber. It is also rich in minerals such as iron, calcium and phosphorus. Thanks to a moderate Glycemic Index (IG 65 against IG 95 for white rice flour), sorghum flour is recommended as a mixture in many preparations, in order to limit blood glucose and is suitable for diabetics.
