Our suggestion: gently simmer the medallions for 20 minutes in some broth, add bay leaves, your favourite aromatic herbs, a few cloves, a couple of dehydrated shiitake mushrooms, nutritional yeast and some red or white wine. (You can then use the stock and thicken it with cornstarch). Yummy.
